Our Premium Matcha is produced in Yame, Fukuoka Prefecture, one of Japan's oldest tea-growing regions renowned for quality shaded green teas.

The quality of matcha is determined by several key factors. Ideal matcha is harvested during the nutrient-rich spring first flush (April/May). It uses umami-boosting cultivars and careful processing methods to preserve flavour. The grinding and final colour also impact the end product.

Our exclusive Yame matcha blend demonstrates this premium quality from start to finish. This blend combines two heritage Japanese cultivars: Okumidori prized for its rich umami and Yabukita known for its classic balanced flavour.

The leaves are harvested during the spring's first flush when at their tenderest. Skilled artisans shade and fertilise the plants, increasing amino acids. Traditional stone-grinding keeps friction low, protecting delicate flavours and aroma. Our matcha is ground for over an hour per kilo and then rested to set the flavour and maintain prized umami.

Vibrant green and supremely smooth, this matcha whisks to a superior cup with fresh grassy notes. It delivers refined umami balanced by a pleasant mild bitterness.

Please note this matcha falls under the premium grade (not ceremonial), and is the highest quality matcha of our range.

Steeping Suggestions

  • Put 1/2 tsp Yame matcha into 180 ml hot water (80ºC).
  • Whisk in the matcha until fully dissolved and foamy.
  • Add more water and sweetener if desired.
  • For iced matcha, add a teaspoon to cold water and either shake vigorously in a 500 ml water bottle, or use a cocktail shaker with ice and water.
